Meet Chef Allyson Roofe, a proud Jamaican-born chef whose love for food began long before she ever stepped foot in a professional kitchen.
In 1997, at just 19 years old, Allyson left her island home and brought the vibrant flavors, spices, and traditions of Jamaica to Miami—determined to make her mark in the culinary world. For her, cooking has never been just a career; it’s a true calling. She believes food has the power to tell stories, spark memories, and bring people together. Her philosophy is simple yet powerful: “Cook with love, and share what you know.”
Her culinary journey has taken her through some of Miami’s most recognized hotels, including the Nautilus, Arlo, and Trump National Hotel. Along the way, she refined her craft, experimented with bold flavors, and left her mark on Miami’s dynamic food scene.
Today, Chef Allyson calls Trump International Beach Resort in Sunny Isles her home. Here, she continues to grow as a leader, inspire others, and bring a taste of Jamaica to every table she touches.
Her mission remains the same: to create food that’s filled with love, rooted in culture, and meant to be shared. As she beautifully puts it:
